Any commercial chefs in here? What are your personal struggles of working in the kitchen?
Well for starters, the industry is doing really bad and 5 star hotels don’t have a lot of opportunities at the moment but Ya if I talk about India, stand alone restaurants and Cloud kitchens are picking up its pace. It’s really hard to get in though, if you’re a fresher with no experience. This industry demands experience from you right after college which is technically not possible and Nepotism works at it best here :)
Keep grinding, hone your skills, study about different cuisines and don’t stick to a specific brand, don’t make the same mistakes I made. Explore your options, go for restaurants and Cloud kitchens or Catering too. Don’t expect too much money at the start focus on your learnings I believe that’ll be the best advice I can give you or any other chef aspirants at the moment.
All this is from my personal experience and I really hope I’ll get that call from Taj someday :)
